Parser functions integrate more closely than tag extensions with templates and other parser features. Compare with tag hook extensions, which take unprocessed text and return HTML. There is no integration with the rest of the parser; extension output can't be used as a template parameter. Expanding templates within extension tags is possible manually (an error-prone process; changes per version).
